Simple Ways to Cook with Beef Tallow

Simple Ways to Cook with Beef Tallow

Start with the meals you already love

You do not need a specialist cookbook to use beef tallow. The easiest approach is to start with meals you already prepare and use tallow as the cooking fat where it makes sense. It is especially useful when you want strong browning, roasting or a rich savoury finish.

Steak

Heat your pan well, then add a small amount of tallow and allow it to melt. Add the steak once the pan is ready and cook to your preferred level. The tallow complements the natural beef flavour and helps create the conditions for a good sear. Rest the steak before serving.

Burgers

Tallow works naturally with burgers for the same reason it works with steak. A lightly coated hot pan or griddle is usually enough. Cook until the outside develops good colour and the centre reaches your preferred doneness.

Eggs and everyday frying

A small spoonful of tallow can also be used for eggs and other simple pan-fried foods. You do not need to flood the pan. Melt just enough to coat the surface and add the food once the fat is hot.

Roast potatoes

Parboil your potatoes, drain them well and roughen the edges. Heat tallow in the roasting tray before adding the potatoes, then turn them so they are lightly coated. Roast until crisp and golden, turning during cooking.

Roasted vegetables

Carrots, parsnips and other roasting vegetables can be lightly coated in melted tallow before going into the oven. Season simply and leave enough room between pieces so they roast and caramelise rather than steam.

Sunday roasts

Tallow fits beautifully into a traditional roast dinner. Use it for potatoes and, where appropriate, for browning or basting parts of the meal. Its savoury flavour works especially well alongside beef and hearty vegetables.

Garlic steak bites

Cut steak into bite-sized pieces and heat a little tallow in a hot pan. Brown the steak quickly in batches so the pan stays hot. Add garlic near the end so it flavours the tallow without burning. This is a quick way to use tallow in a simple midweek meal.

Experiment one spoonful at a time

The best way to become comfortable cooking with tallow is to use it regularly. Start small, notice how it behaves in your own pans and oven, and adjust the quantity to suit your preference. It is a flexible ingredient, not a rigid recipe.

Keep it simple

Golden Herd Organics is about bringing a traditional Irish cooking fat back into everyday kitchens. A jar of tallow does not need to change the way you cook; it simply gives you another simple, flavourful option for the food you already enjoy.
